Making Rewena

To keep going with our interest in where our food comes from we are going to try making some rewena. Rewena is a traditional Maori bread made using a potato yeast instead of a traditional yeast. Making rewena is a multi step process as you have to create a bug or plant (like ginger beer or sour dough) and feed it over several days before it can be used.

Today was the first step, peeling and chopping our potato then boiling until soft, adding some sugar and mashing.

We will keep posting as our bread making process continues.
